It is double happiness for pork lovers as two cuts are served in one celebratory dish. The Holland pork is slow cook in a flavourful gravy with fragrant additions of spring onions, garlic, ginger, oyster sauce and chilli, for five hours and steamed together for a further two hours to achieve the desired tenderness. The spare ribs are marinated in soya sauce, flash-fried, before being braised in homemade stock for one and a half hours. Australian 10-head abalones, sea cucumber, dried oysters, dried scallops, flower mushrooms, ‘fa cai’ (black moss) and Tianjin cabbage which are cooked separately are then combined before serving.
